Tanana Valley Salmon Seafood Recipe

Ingredients

  • 1 lime
  • 4 salmon fillets or steaks – (6 oz ea) — thawed if necessary
  • 1 1/4 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon sea salt
  • (or 3/4 tspn iodized salt)
  • 1/2 teaspoon coarse-ground black pepper
  • 1/4 teaspoon ground cinnamon

Method

  1. Cut lime in half and squeeze juice over salmon fillets/steaks
  2. Blend cumin, chili powder, salt, black pepper and cinnamon in a small bowl; sprinkle over salmon
  3. Broil salmon about 4 to 5 inches from heat for 10 minutes or until salmon flakes easily when tested with a fork
  4. This recipe yields 4 servings
  5. Side Dishes include:
  6. Broccoli-Carrot Blend: Prepare 1 pound frozen broccoli-carrot mixture according to package directions
  7. Sprinkle with seasoned salt to taste
  8. Steamed Rice: Prepare 1 cup instant white rice in a steamer or sauce pot according to package directions
  9. Sprinkle with 2 teaspoons chives or green onions before serving
