Ranch Taco Soup

Ingredients

  • 2 lb. ground beef or turkey
  • 1/2 yellow onion, chopped
  • 15 oz. can whole kernel corn, drained
  • 1.25 oz. taco seasoning packet
  • 1 oz. ranch dressing packet
  • 2 – 14.5 oz. cans diced tomatoes
  • 4.5 oz diced green chilies
  • 10 oz. can red enchilada sauce
  • 2 – 15.5 oz cans kidney beans, drained
  • 15.5 oz. can black beans, drained
  • 14 oz. can beef broth
  • 1/2 cup chopped cilantro
  • garnish with sour cream, grated cheese, green onion, jalapeno, tortilla chips, and/or cilantro as desired

Method

  1. Heat a skillet on the stove to medium heat
  2. Crumble and brown ground meat and chopped onion together until cooked
  3. Drain if necessary
  4. Place the cooked meat along with all other soup ingredients in your Crockpot slow cooker, and stir
  5. Close the lid and let cook on low for about 3-4 hours
  6. Serve with desired toppings such as sour cream, grated cheese, green onion, jalapeno, tortilla chips, or more chopped cilantro
