Ranch Taco Soup
Ingredients
- 2 lb. ground beef or turkey
- 1/2 yellow onion, chopped
- 15 oz. can whole kernel corn, drained
- 1.25 oz. taco seasoning packet
- 1 oz. ranch dressing packet
- 2 – 14.5 oz. cans diced tomatoes
- 4.5 oz diced green chilies
- 10 oz. can red enchilada sauce
- 2 – 15.5 oz cans kidney beans, drained
- 15.5 oz. can black beans, drained
- 14 oz. can beef broth
- 1/2 cup chopped cilantro
- garnish with sour cream, grated cheese, green onion, jalapeno, tortilla chips, and/or cilantro as desired
Method
- Heat a skillet on the stove to medium heat
- Crumble and brown ground meat and chopped onion together until cooked
- Drain if necessary
- Place the cooked meat along with all other soup ingredients in your Crockpot slow cooker, and stir
- Close the lid and let cook on low for about 3-4 hours
- Serve with desired toppings such as sour cream, grated cheese, green onion, jalapeno, tortilla chips, or more chopped cilantro
