Syrian Bread Salad Recipe

Ingredients

Makes 4 servings

  • 3 (6-inch) pita breads, torn into bite-size pieces
  • 2 large ripe tomatoes, cut into 1/4-inch dice
  • 1 small red onion, chopped
  • 1 medium English cucumber, peeled and cut into 1/2-inch dice
  • 1/3 cup chopped green bell pepper
  • 1/4 cup pitted brine-cured black olives
  • 1/4 cup chopped fresh parsley
  • 2 garlic cloves, minced Juice of 1 lemon 1/2 teaspoon salt
  • pinch ground cayenne
  • 1/3 cup olive oil

Method

  1. Preheat the oven to 350°F
  2. Arrange the pita pieces on a baking sheet in a single layer
  3. Bake until lightly toasted, about 10 minutes, then transfer to a large bowl
  4. Add the tomatoes, onion, cucumber, bell pepper, olives and parsley
  5. Set aside
  6. In a small bowl, combine the garlic, lemon juice, salt, cayenne and oil
  7. Mix well and pour over the salad
  8. Toss gently to combine and serve
