Ingredients
Makes 4 servings
- 3 (6-inch) pita breads, torn into bite-size pieces
- 2 large ripe tomatoes, cut into 1/4-inch dice
- 1 small red onion, chopped
- 1 medium English cucumber, peeled and cut into 1/2-inch dice
- 1/3 cup chopped green bell pepper
- 1/4 cup pitted brine-cured black olives
- 1/4 cup chopped fresh parsley
- 2 garlic cloves, minced Juice of 1 lemon 1/2 teaspoon salt
- pinch ground cayenne
- 1/3 cup olive oil
Method
- Preheat the oven to 350°F
- Arrange the pita pieces on a baking sheet in a single layer
- Bake until lightly toasted, about 10 minutes, then transfer to a large bowl
- Add the tomatoes, onion, cucumber, bell pepper, olives and parsley
- Set aside
- In a small bowl, combine the garlic, lemon juice, salt, cayenne and oil
- Mix well and pour over the salad
- Toss gently to combine and serve
