Ingredients
- 1/2 med onion sliced
- 1 med carrot sliced
- 1 med celery sliced
- 3 chicken breasts
- 1/3 cup firmly packed brown sugar
- 1/3 cup Catalina dressing
- 1/4 cup soy sauce
- 1 tsp ginger
- 1 can pineapple liquid reserved
- 1 tbsp cornstarch
- 1 med green pepper sliced
- 1 med red pepper sliced
Method
- In a crock pot, place the celery, onion and carrots
- Top the vegetables with the chicken
- In a bowl mix the Catalina, soy sauce, brown sugar and ginger; pour over the chicken
- Cover and cook on a low heat setting for 7 ½ to 8 hours
- During the last 30 minutes of cooking time, stir the pineapple liquid and cornstarch together in a bowl
- Pour this liquid into the crock pot and add the bell peppers
- Cover and turn up to heat to a high setting
- Serve hot with rice
