Ingredients

- 1 cup cooked mashed sweet potatoes
- 3 tablespoons melted butter
- 1 package dry yeast
- 1/2 cup warm water
- 1 egg
- 1 teaspoon salt
- 3 tablespoons sugar
- 5 cups all-purpose flour
- 3/4 cup warm water
Method
- Blend potatoes and melted butter.
- Dissolve yeast in 1/2 cup very warm water.
- Add to the potatoes.
- Add egg, salt and sugar, blend well.
- Add flour alternately with 3/4 cup warm water.
- Turn out on well floured board and knead until smooth.
- Place in greased bowl, turning to grease top, cover, allow to rise for 2 hours.
- Place dough on board and roll to desired thickness.
- Cut into shapes desired.
- Brush rolls with butter.
- Let rise for 1 hour.
- Bake at 425 degrees for 15 or 20 minutes.
- Yield 30 rolls.
