Sweet Potato Mousse Recipe

  • 4 medium sweet potatoes (about 800 g), peeled and cut into large chunks
  • 1/4 cup reduced-calorie BBQ sauce
  • 1/4 cup no-salt-added veggie broth or unsweetened coconut milk or unsweetened almond milk, plus more if desired
  • 1 tablespoon coconut sugar or 1/2 teaspoon (2 g) stevia in the raw for a lower-carb alternative
  • 1 tablespoon olive oil
  • 1/2 teaspoon ground cinnamon
  • 11/2 teaspoons curry powder
  • 1 teaspoon ground turmeric (optional)
  • sea salt and black pepper
  • garnish: sliced green onion

Method

  1. Bring a large pot of water to a boil and add the sweet potato chunks
  2. Cook until tender, about 25 minutes
  3. You should be able to pierce them easily with a fork
  4. Transfer the potatoes to a large bowl and break them up with a fork or potato masher
  5. Add the rest of the ingredients, then whip the potatoes until smooth
  6. Be careful not to overmix; they should be airy and fluffy; a few chunks here or there are okay
  7. You can add tablespoons of veggie broth (or almond milk) if you prefer the potatoes to be less thick
