- 4 medium sweet potatoes (about 800 g), peeled and cut into large chunks
- 1/4 cup reduced-calorie BBQ sauce
- 1/4 cup no-salt-added veggie broth or unsweetened coconut milk or unsweetened almond milk, plus more if desired
- 1 tablespoon coconut sugar or 1/2 teaspoon (2 g) stevia in the raw for a lower-carb alternative
- 1 tablespoon olive oil
- 1/2 teaspoon ground cinnamon
- 11/2 teaspoons curry powder
- 1 teaspoon ground turmeric (optional)
- sea salt and black pepper
- garnish: sliced green onion
Method
- Bring a large pot of water to a boil and add the sweet potato chunks
- Cook until tender, about 25 minutes
- You should be able to pierce them easily with a fork
- Transfer the potatoes to a large bowl and break them up with a fork or potato masher
- Add the rest of the ingredients, then whip the potatoes until smooth
- Be careful not to overmix; they should be airy and fluffy; a few chunks here or there are okay
- You can add tablespoons of veggie broth (or almond milk) if you prefer the potatoes to be less thick
