Ingredients
- ½ cup unsalted butter
- ¼ teaspoon sea salt
- 2 cups all-purpose flour
- 3 large eggs
- 4 cups spanish extra-virgin olive oil
- ¼ cup sugar
- 2 cups spanish hot chocolate
Method
- Combine the butter, salt, and 2 cups of water in a medium pot
- Heat over medium-low heat until the mixture begins to boil, then stir in the flour
- Reduce the heat to low and stir vigorously until the batter forms a ball
- Remove the pot from the heat
- Beat the eggs in a mixing bowl until smooth
- Gradually stir the eggs into the batter until well combined
- Spoon the batter into a pastry bag fitted with a star tip, then fold down the sides of the bag to compress the batter
- Heat the olive oil in a large pot until it measures 350°F on a candy thermometer
- Squeeze 3 or 4 4-inch strips of batter into the hot oil
- Fry, turning the strips, until golden brown, about 4 minutes
- Transfer the churros to a paper towel-lined plate to drain
- Spread the sugar on a plate
- While the churros are still hot, roll them in the sugar
- Repeat with the remaining batter, allowing the oil to return to 350°F between batches
- Serve the churros with small cups of hot chocolate
