Suspended Peach Agar Recipe

Ingredients

Makes 4 servings

  • 2 cups white grape juice
  • 2 tablespoons agar flakes
  • 1 tablespoon agave nectar
  • 2 ripe peaches, halved, pitted and cut into 1/4-inch slices

Method

  1. In a medium saucepan, combine the grape juice and agar and bring to a boil over high heat
  2. Reduce heat to low and simmer, stirring occasionally, until the agar is dissolved, about 5 minutes
  3. Stir in the agave nectar and set aside
  4. Arrange the peach slices in a gelatin mold or clear glass bowl
  5. Pour the juice mixture over the peaches and chill, uncovered, until firm, 1 to 2 hours
