Sunflower Artisan Bread Recipe

Ingredients

Makes 1 loaf

  • 1 1/4 cups plain soy milk
  • 3 tablespoons pure maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 package active dry yeast (21/4 teaspoons)
  • 3 cups all-purpose flour or bread flour
  • 1/2 cup sunflower seeds

Method

  1. In a medium saucepan, combine the soy milk, maple syrup, oil and salt and heat over low heat until lukewarm
  2. Remove from the heat, stir in the yeast and set aside
  3. In a large bowl, combine the flour and sunflower seeds
  4. Add the yeast mixture and mix well to combine
  5. Turn the dough out onto a lightly floured work surface and knead for 5 minutes
  6. Place the dough in a large lightly oiled bowl, turning the dough to coat with oil
  7. Cover with plastic wrap or a clean dish towel and let rise for 1 hour
  8. Test dough by poking it with your finger
  9. Its ready if the indentation from your finger remains
  10. Lightly oil a baking sheet
  11. Punch the dough down, then shape it into a loaf
  12. Place the dough on the prepared baking sheet
  13. Cover with plastic wrap or a clean dish towel and let rise again for 1 hour
  14. Preheat the oven to 375°F
  15. Uncover and bake the bread until golden brown, about 40 minutes
  16. During the last 20 minutes of baking time, cover the bread loosely with foil
  17. Turn the loaf out onto a wire rack to cool for 30 minutes before slicing
