Ingredients
Makes 1 loaf
- 1 1/4 cups plain soy milk
- 3 tablespoons pure maple syrup
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 package active dry yeast (21/4 teaspoons)
- 3 cups all-purpose flour or bread flour
- 1/2 cup sunflower seeds
Method
- In a medium saucepan, combine the soy milk, maple syrup, oil and salt and heat over low heat until lukewarm
- Remove from the heat, stir in the yeast and set aside
- In a large bowl, combine the flour and sunflower seeds
- Add the yeast mixture and mix well to combine
- Turn the dough out onto a lightly floured work surface and knead for 5 minutes
- Place the dough in a large lightly oiled bowl, turning the dough to coat with oil
- Cover with plastic wrap or a clean dish towel and let rise for 1 hour
- Test dough by poking it with your finger
- Its ready if the indentation from your finger remains
- Lightly oil a baking sheet
- Punch the dough down, then shape it into a loaf
- Place the dough on the prepared baking sheet
- Cover with plastic wrap or a clean dish towel and let rise again for 1 hour
- Preheat the oven to 375°F
- Uncover and bake the bread until golden brown, about 40 minutes
- During the last 20 minutes of baking time, cover the bread loosely with foil
- Turn the loaf out onto a wire rack to cool for 30 minutes before slicing
