Summer Fruit Soup Recipe

Ingredients

Makes 4 servings

  • 2 cups chopped cantaloupe or honeydew melon
  • 1 cup chopped fresh pineapple
  • 1 ripe mango or 2 peaches, peeled, pitted and chopped
  • 1 ripe banana, chopped
  • 1 tablespoon fresh lemon juice
  • 1 cup fresh orange juice
  • 1 cup apple or pineapple juice
  • 1/2 cup plain unsweetened soy milk
  • 1/3 cup vegan plain yogurt or vegan sour cream, 2 tablespoons agave nectar
  • 1/2 cup hulled sliced strawberries, for garnish
  • fresh mint sprigs, for garnish

Method

  1. In a food processor, combine the cantaloupe, pineapple, mango and banana and process until smooth
  2. Add the lemon juice, orange juice, apple juice and soy milk and process until well blended
  3. Pour the soup into a large container
  4. Cover and refrigerate until well chilled, at least 3 hours
  5. In a small bowl, combine the yogurt and agave nectar in a small bowl and blend until smooth
  6. Ladle the chilled soup into bowls, garnish with a spoonful of the yogurt mixture, a few strawberry slices and fresh mint sprigs and serve
