Ingredients
Makes 4 servings
- 2 cups chopped cantaloupe or honeydew melon
- 1 cup chopped fresh pineapple
- 1 ripe mango or 2 peaches, peeled, pitted and chopped
- 1 ripe banana, chopped
- 1 tablespoon fresh lemon juice
- 1 cup fresh orange juice
- 1 cup apple or pineapple juice
- 1/2 cup plain unsweetened soy milk
- 1/3 cup vegan plain yogurt or vegan sour cream, 2 tablespoons agave nectar
- 1/2 cup hulled sliced strawberries, for garnish
- fresh mint sprigs, for garnish
Method
- In a food processor, combine the cantaloupe, pineapple, mango and banana and process until smooth
- Add the lemon juice, orange juice, apple juice and soy milk and process until well blended
- Pour the soup into a large container
- Cover and refrigerate until well chilled, at least 3 hours
- In a small bowl, combine the yogurt and agave nectar in a small bowl and blend until smooth
- Ladle the chilled soup into bowls, garnish with a spoonful of the yogurt mixture, a few strawberry slices and fresh mint sprigs and serve
