Summer Berry Cheesecake Pie Recipe

Ingredients

• 1 package (8 oz.) cream cheese, softened
• 2 tablespoons sugar
• 2 cups whipped topping, divided
• 1 prepared graham cracker crumb crust
• 3/4 cup boiling water
• 1 pkg. (3 oz.) Jello Strawberry Flavor Gelatin
• 1/2 cup ice cubes
• 1/2 cup blueberries
• 1 1/2 cups strawberries, halved

Method

1. In a large mixing bowl, beat cream cheese and sugar until smooth
2. Stir in one cup of whipped topping and spoon into crust
3. In a medium bowl, add boiling water to gelatin and stir until completely dissolved
4. Add ice and stir until melted
5. Let stand for 5 minutes
6. Arrange blueberries in a single layer over batter
7. Surround with strawberries
8. Pour gelatin over fruit
9. Refrigerate for 4 to 6 hours, until Jello is firm
10. Top with remaining whipped topping
