Ingredients
- green bell peppers, washed and cored
- 1 pound (455 g) ground turkey
- ¼ cup (65 g) barbecue sauce
- 1 cup (165 g) cooked rice
- ¼ cup (60 ml) egg substitute
- ½ teaspoon Italian seasoning
- 1 cup (245 g) no-salt-added tomato sauce
Method
- Place peppers into slow cooker
- Mix ground turkey, barbecue sauce, rice, egg substitute, and Italian seasoning together
- Spoon mixture carefully into peppers, taking care not to tear the peppers
- Pour tomato sauce into slow cooker on and around peppers
- Cook on low for 6 to 8 hours
- Yield: 5 servings
- Per serving: 282 g water; 279 calories (18% from fat, 45% from protein, 37% from carb)
