Stuffed Chicken Breast Slow Cooker Recipe

Ingredients

  • boneless skinless chicken breasts
  • 4 slices Swiss cheese
  • ¼ teaspoon black pepper, or to taste
  • 4 slices low-salt bacon
  • ¼ cup (60 ml) low-salt chicken broth
  • ½ cup 120 ml white cooking wine

Method

  1. Cut each breast in half lengthwise
  2. Flatten chicken to ½-inch (1
  3. 3 cm) thickness
  4. Place a slice of cheese on top of each flattened breast
  5. Sprinkle with pepper
  6. Roll up and wrap with strip of bacon
  7. Secure with toothpick
  8. Place in slow cooker
  9. Combine broth and wine
  10. Pour into slow cooker
  11. Cover
  12. Cook on high 4 hours
  13. Yield: 6 servings
  14. Per serving: 37 g water; 83 calories (43% from fat, 56% from protein, 1% from carb)
