Ingredients
Makes 4 servings
- 1/2 cup unsalted raw cashews
- 4 tablespoons sugar
- 1/2 cup plain or vanilla soy milk
- ¾ cup firm silken tofu, drained
- 1 teaspoon pure vanilla extract
- 2 cups sliced strawberries 1 teaspoon fresh lemon juice
- fresh mint leaves, for garnish
Method
- In a blender, grind the cashews and 3 tablespoons of the sugar to a fine powder
- Add the soy milk and blend until smooth
- Add the tofu and vanilla and continue to blend until smooth and creamy
- Scrape the cashew mixture into a medium bowl, cover and refrigerate for 30 minutes
- In a large bowl, combine the strawberries, lemon juice and remaining 1 tablespoon sugar
- Stir gently to combine and set aside at room temperature for 20 minutes
- Spoon alternating layers of the strawberries and cashew creme into parfait glasses or wine glasses, ending with a dollop of the cashew creme
- Garnish with mint leaves and serve
