Ingredients
Makes 6 servings
- 2 tablespoons agar flakes
- 2 cups white grape juice
- 1 cup hulled strawberries plus more for garnish
- 1 tablespoon agave nectar
- vegan whipped cream, homemade or store-bought, for garnish
Method
- In a medium saucepan, combine the agar flakes and 1 cup of the juice and let soak for 10 minutes
- In a blender or food processor, puree the strawberries with the agave nectar and the remaining grape juice
- Set aside
- Bring the agar and juice mixture to a boil over high heat, then reduce heat to low and simmer, stirring frequently, until the agar is dissolved, about 5 minutes
- Cool the juice mixture slightly, about 15 minutes, then pour into the blender with the pureed berries
- Blend briefly to combine
- Pour into a glass baking dish or individual glass dessert dishes and allow to cool in the refrigerator until the agar sets up, about 30 minutes
- If agar was made in a baking dish, cut it into squares
- Garnish with the additional berries and whipped cream and serve
