Steel-Cut Oatmeal With Cinnamon Vanilla And Dried Fruit Pressure Cooker Recipe

Ingredients

SERVES 4 to 6 – Cooker: 5- to 7-quart – Time: 8 minutes at HIGH pressure

  • 3 cups water
  • 3 cups nondairy milk, such as rice milk, coconut milk, soy milk, almond milk, or oat milk
  • 2 cups steel-cut oats
  • 2 tablespoons butter
  • 1 cinnamon stick or ¼ teaspoon ground cinnamon
  • ½ vanilla bean or ½ teaspoon vanilla extract
  • ½ to ¾ cup dried currants, cranberries, cherries, raisins, or a mixture, to taste

Method

  1. Combine the ingredients in a 5- to 7-quart pressure cooker
  2. If using the vanilla bean, remove the seeds, and add both the seeds and the bean
  3. You do not need to stir
  4. Close and lock the lid
  5. Set the burner heat to high
  6. When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
  7. Set a timer to cook for 8 minutes
  8. Remove the pot from the heat
  9. Open the cooker with the Natural Release method; let stand for 15 minutes
  10. At time, if the pressure is not all released, open the valve
  11. Be careful of the steam as you remove the lid
  12. The mixture should be fairly loose and creamy
  13. Serve at once
  14. Breakfast Steel-Cut Oatmeal and Quinoa with Cinnamon, Vanilla, and Dried Fruit: Add ½ cup rinsed white or red quinoa in Step 1
