Ingredients
SERVES 4 to 6 – Cooker: 5- to 7-quart – Time: 8 minutes at HIGH pressure
- 3 cups water
- 3 cups nondairy milk, such as rice milk, coconut milk, soy milk, almond milk, or oat milk
- 2 cups steel-cut oats
- 2 tablespoons butter
- 1 cinnamon stick or ¼ teaspoon ground cinnamon
- ½ vanilla bean or ½ teaspoon vanilla extract
- ½ to ¾ cup dried currants, cranberries, cherries, raisins, or a mixture, to taste
Method
- Combine the ingredients in a 5- to 7-quart pressure cooker
- If using the vanilla bean, remove the seeds, and add both the seeds and the bean
- You do not need to stir
- Close and lock the lid
- Set the burner heat to high
- When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
- Set a timer to cook for 8 minutes
- Remove the pot from the heat
- Open the cooker with the Natural Release method; let stand for 15 minutes
- At time, if the pressure is not all released, open the valve
- Be careful of the steam as you remove the lid
- The mixture should be fairly loose and creamy
- Serve at once
