Steak Strips Recipe

Ingredients

  • Serving Size : 1
  • 1 pound top sirloin steaks – sliced into thin
  • 1 can tomatoes – diced (10 oz)
  • 1 cup carrots – thinly sliced
  • 1/2 cup onion – finely chopped
  • 1/2 teaspoon basil
  • 1/4 teaspoon oregano
  • 4 tablespoons flour
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon cumin
  • 1 tablespoon peanut oil
  • 1 cup zucchini – thinly sliced
  • 1 1/2 cups mushrooms – sliced

Method

  1. Pour juice from tomatoes into a microwave-safe dish and add carrots, onion, basil and oregano.
  2. Cover and microwave on high power for 4 minutes, stirring once during that time.
  3. Combine flour, salt, pepper, cumin; dredge steak strips.
  4. Add oil to an oblong microwave-safe baking dish and spread steak strips over bottom.
  5. Cover and cook on medium power for 6 minutes, stirring once during that time.
  6. Stir in carrot mixture, tomatoes, zucchini and mushrooms.
  7. Cover and continue cooking on medium power for 12 minutes, stirring 3 or 4 times.
  8. Let stand 3 minutes.
  9. Serve with rice.
