Steak Eggs And Waffles With Chimichurri Recipe

Ingredients

Serves 6

  • 1 jalapeno, trimmed, seeded and finely chopped
  • 1 tsp minced garlic
  • 1 1/2 cups finely chopped Italian parsley
  • 3 tbsps. finely chopped oregano
  • 1/2 tsp crushed red pepper
  • 3 tbsps. lime juice
  • 3 tbsps. extra-virgin olive oil
  • salt and freshly ground pepper
  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 1 1/2 tsps. baking powder
  • 1 tsp baking soda
  • 1 tbsp granulated sugar
  • 1/2 tsp salt
  • 8 large eggs
  • 2 cups buttermilk
  • 1/2 cup unsalted butter, melted; plus 2 tbsps. unmelted
  • 2 tbsps. extra-virgin olive oil
  • 2 (8-oz.) strip steaks, filet mignons or sirloin steaks

Method

  1. In a medium bowl, combine the jalapeno, garlic, parsley, oregano, red pepper and lime juice
  2. Stir in the olive oil and season with salt and pepper
  3. Cover and refrigerate at least 2 hours or overnight
  4. Allow the sauce to come to room temperature before serving
  5. Preheat a waffle iron to medium according to manufacturer’s instructions
  6. In a large bowl, sift together the flour, cornmeal, baking powder, baking soda, sugar and salt
  7. Crack 2 eggs into small bowls, separating the yolks from the whites
  8. Whisk the two egg yolks, buttermilk and 1/2 cup melted butter together in a small bowl
  9. Stir the egg yolk mixture into the dry ingredients until just combined
  10. In a medium bowl, whisk the 2 egg whites to stiff peaks (or use an electric mixer).
  11. Fold the whites into the reserved batter until just combined.
  12. Ladle the batter into the preheated waffle iron
  13. Bake until golden brown, according to manufacturer’s directions
  14. Keep waffles warm until all are complete
  15. Melt the remaining 2 tbsps butter in a large skillet (preferably cast-iron) over medium heat
  16. Rub the oil all over the steaks and season them with salt and pepper
  17. Add the steaks to the hot pan and cook for 3 minutes
  18. Then turn the steaks and cook for 2-4 minutes longer to desired degree of doneness
  19. Allow the steak to rest while the eggs poach
  20. Poach the remaining 6 eggs according to your preferred method
  21. Divide the waffles among 6 plates
  22. Slice the steaks into thin slices and divide the slices among the waffles
  23. Top each with a poached egg
  24. Divide the chimichurri sauce evenly over the eggs to serve
