Ingredients
Makes 4 servings
- 1 tablespoon chopped green onions
- 1/4 cup chopped fresh parsley
- 1/4 cup walnut oil
- 1 1/2 tablespoons fresh lemon juice
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- freshly ground black pepper
- 5 cups mixed field greens
- 1/4 cup chopped pitted kalamata olives
- ¾ cup sliced hulled fresh strawberries
- 2 tablespoons toasted pine nuts
Method
- In a blender or food processor, combine the green onions, parsley, oil, lemon juice, sugar, salt and pepper to taste and process until smooth
- Set aside
- In a large bowl, combine the field greens, olives, strawberries and pine nuts
- Add enough dressing to lightly coat
- Toss gently to combine and serve
