Spring Greens With Black Olives Toasted Pine Nuts Recipe

Ingredients

Makes 4 servings

  • 1 tablespoon chopped green onions
  • 1/4 cup chopped fresh parsley
  • 1/4 cup walnut oil
  • 1 1/2 tablespoons fresh lemon juice
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • freshly ground black pepper
  • 5 cups mixed field greens
  • 1/4 cup chopped pitted kalamata olives
  • ¾ cup sliced hulled fresh strawberries
  • 2 tablespoons toasted pine nuts

Method

  1. In a blender or food processor, combine the green onions, parsley, oil, lemon juice, sugar, salt and pepper to taste and process until smooth
  2. Set aside
  3. In a large bowl, combine the field greens, olives, strawberries and pine nuts
  4. Add enough dressing to lightly coat
  5. Toss gently to combine and serve
