Spicy Southwestern-Style Coleslaw Recipe

Ingredients

Makes 4 servings

  • 2 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 1 medium red bell pepper, cut into matchsticks
  • 2 tablespoons minced fresh parsley
  • 1/4 cup olive oil
  • 2 tablespoons cider vinegar
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • 1/8 teaspoon ground cayenne

Method

  1. In a large bowl, combine the green and red cabbage, bell pepper and parsley
  2. Set aside
  3. In a small bowl, combine the oil, vinegar, sugar, salt, cumin, chili powder and cayenne
  4. Blend well
  5. Pour the dressing over the vegetables and toss to combine
  6. Taste, adjusting seasonings if necessary
  7. Cover and refrigerate to allow flavors to blend, about 2 hours and serve
