Ingredients
Makes 4 servings
- 2 cups shredded green cabbage
- 2 cups shredded red cabbage
- 1 medium red bell pepper, cut into matchsticks
- 2 tablespoons minced fresh parsley
- 1/4 cup olive oil
- 2 tablespoons cider vinegar
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon ground cumin
- 1/4 teaspoon chili powder
- 1/8 teaspoon ground cayenne
Method
- In a large bowl, combine the green and red cabbage, bell pepper and parsley
- Set aside
- In a small bowl, combine the oil, vinegar, sugar, salt, cumin, chili powder and cayenne
- Blend well
- Pour the dressing over the vegetables and toss to combine
- Taste, adjusting seasonings if necessary
- Cover and refrigerate to allow flavors to blend, about 2 hours and serve
