Ingredients
Makes 4 servings
- 1 medium bunch broccoli rabe (rapini), tough stems removed
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1/2 teaspoon crushed red pepper
- salt and freshly ground black pepper
Method
- In a saucepan of boiling salted water, cook the broccoli rabe until just tender, about 5 minutes
- Drain and run under cold water, then coarsely chop
- Set aside
- In a large skillet, heat the oil over medium heat
- Add the garlic and cook for 30 seconds
- Stir in the rabe and the crushed red pepper
- Season with salt and black pepper to taste and cook, stirring, until heated through, about 3 minutes
- Serve immediately
