Ingredients
Makes 4 servings
- 2 cups water
- 1 cup long-grain brown or white rice
- 2 tablespoons olive oil
- 1 medium yellow onion, chopped
- 2 garlic cloves, minced
- 8 ounces seitan chopped
- 8 ounces white mushrooms, chopped
- 1 teaspoon dried basil
- 1/2 teaspoon ground fennel seed
- 1/4 teaspoon crushed red pepper
- salt and freshly ground black pepper
Method
- In a large saucepan, bring the water to boil over high heat
- Add the rice, reduce the heat to low, cover and cook until tender, about 30 minutes
- In a large skillet, heat the oil over medium heat
- Add the onion, cover and cook until softened, about 5 minutes
- Add the seitan and cook uncovered until browned
- Stir in the mushrooms and cook until tender, about 5 minutes longer
- Stir in the basil, fennel, crushed red pepper and salt and black pepper to taste
- Transfer the cooked rice to large serving bowl
- Stir in the seitan mixture and mix thoroughly
- Adda generous amount of black pepper and serve immediately
