Spicy Rice With Mushrooms And Seitan Recipe

Ingredients

Makes 4 servings

  • 2 cups water
  • 1 cup long-grain brown or white rice
  • 2 tablespoons olive oil
  • 1 medium yellow onion, chopped
  • 2 garlic cloves, minced
  • 8 ounces seitan chopped
  • 8 ounces white mushrooms, chopped
  • 1 teaspoon dried basil
  • 1/2 teaspoon ground fennel seed
  • 1/4 teaspoon crushed red pepper
  • salt and freshly ground black pepper

Method

  1. In a large saucepan, bring the water to boil over high heat
  2. Add the rice, reduce the heat to low, cover and cook until tender, about 30 minutes
  3. In a large skillet, heat the oil over medium heat
  4. Add the onion, cover and cook until softened, about 5 minutes
  5. Add the seitan and cook uncovered until browned
  6. Stir in the mushrooms and cook until tender, about 5 minutes longer
  7. Stir in the basil, fennel, crushed red pepper and salt and black pepper to taste
  8. Transfer the cooked rice to large serving bowl
  9. Stir in the seitan mixture and mix thoroughly
  10. Adda generous amount of black pepper and serve immediately
