Ingredients
Makes 4 calzones
- 1 recipe Basic Pizza Dough
- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 1 pound white mushrooms, lightly rinsed, patted, dry and chopped
- 1 (12-ounce) jar cherry peppers, drained, stemmed and seeded*
- 8 ounces extra-firm tofu, drained and crumbled
- 1/2 teaspoon dried oregano
- 1 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Method
- Flatten the risen dough slightly, cover with plastic wrap or clean dish towel and set aside to relax for 10 minutes
- Preheat the oven to 400°F
- In a large skillet, heat the oil over medium heat
- Add the garlic and cook until fragrant, about 30 seconds
- Add the mushrooms and cook, stirring, until any liquid evaporates, about 5 minutes
- Chop the cherry peppers and add to the mushrooms along with the tofu, oregano, salt and pepper
- Cook stirring to blend the flavors and evaporate any remaining liquid, about 5 minutes
- Remove from the heat and set aside to cool
- Turn the relaxed dough out onto a lightly floured work surface and divide into 4 equal pieces
- Use your hands to flatten each piece into 6-inch circles, turning and flouring as needed
- Divide the filling equally among the dough circles, leaving a 1/2-inch border
- Fold each dough circle over the filling to meet the opposite edge of the dough
- With dampened fingers, press the edges of the dough together to seal the filling inside
- Transfer the calzones to the prepared pizza pan or baking sheet and bake until golden brown, about20 minutes
