Ingredients
Makes 4 sandwiches
- 1 cup chopped pitted kalamata olives
- 1 cup chopped pimiento-stuffed green olives
- 1/2 cup chopped pepperoncini (pickle peppers)
- 1/2 cup jarred roasted red peppers (or see Roasted Red Pepper Hummus), chopped
- 2 tablespoons capers
- 3 green onions, minced
- 3 plum tomatoes, chopped
- 2 tablespoons minced fresh parsley
- 1/2 teaspoon dried marjoram
- 1/2 teaspoon dried thyme
- 1/4 cup olive oil
- 2 tablespoons white wine vinegar
- salt and freshly ground black pepper
- 4 individual Kaiser rolls, boules, or other crusty sandwich rolls, halved horizontally
Method
- In a medium bowl, combine the kalamata olives, green olives, pepperoncini, red peppers, capers, green onions, tomatoes, parsley, marjoram, thyme, oil, vinegar and salt and black pepper to taste
- Set aside
- Pull out some of the inside of the sandwich rolls to make room for the filling
- Spoon the filling mixture into the bottom half of the rolls, packing lightly
- Top with remaining roll halves and serve
