Ingredients
Makes about 1 1/2 cups
- 1 ripe mango, peeled, pitted and chopped
- 1 teaspoon minced fresh ginger
- 1 teaspoon minced garlic
- 1/4 cup water
- 1/4 cup soy sauce
- 1/4 cup mirin
- 1/4 cup orange juice concentrate
- 1 teaspoon Asian chili paste
Method
- In a medium saucepan, combine all the ingredients and simmer over low heat to blend the flavors, about 15 minutes
- Puree the sauce in a blender or food processor
- Taste, adjusting seasonings
- Transfer the sauce to a medium bowl
- It can be served warm or at room temperature
- If not using right away, cover and refrigerate until needed
- Properly stored, the sauce will keep for 2 to 3 days
