Ingredients
Makes 4 servings
- 1 tablespoon olive oil
- 1 small red bell pepper, minced
- 2 garlic cloves, minced
- 3 green onions, minced
- 3 cups fresh or thawed frozen corn kernels
- 1 cup unsweetened coconut milk
- 2 tablespoons canned minced hot or mild green chiles
- 2 teaspoons soy sauce
- ground cayenne
- salt and freshly ground black pepper
Method
- In a large saucepan, heat the oil over medium heat
- Add the bell pepper, garlic and green onions and cook until softened, about 5 minutes
- Stir in the corn, coconut milk, chiles, soy sauce and a pinch of cayenne
- Season with salt and black pepper to taste
- Bring to a simmer, then reduce heat to low and cook, stirring occasionally, until the liquid reduces and thickens, about 10 minutes
- Taste, adjusting seasonings if necessary
- Serve immediately
