Spicy Coconut Creamed Corn Recipe

Ingredients

Makes 4 servings

  • 1 tablespoon olive oil
  • 1 small red bell pepper, minced
  • 2 garlic cloves, minced
  • 3 green onions, minced
  • 3 cups fresh or thawed frozen corn kernels
  • 1 cup unsweetened coconut milk
  • 2 tablespoons canned minced hot or mild green chiles
  • 2 teaspoons soy sauce
  • ground cayenne
  • salt and freshly ground black pepper

Method

  1. In a large saucepan, heat the oil over medium heat
  2. Add the bell pepper, garlic and green onions and cook until softened, about 5 minutes
  3. Stir in the corn, coconut milk, chiles, soy sauce and a pinch of cayenne
  4. Season with salt and black pepper to taste
  5. Bring to a simmer, then reduce heat to low and cook, stirring occasionally, until the liquid reduces and thickens, about 10 minutes
  6. Taste, adjusting seasonings if necessary
  7. Serve immediately
