Ingredients
- Serves: 4
- 1 lb beef stew meat
- 1 cup beef broth
- 1 onion, sliced
- 14.5 oz can tomatoes, diced
- 1 tbsp curry powder
- 1 fresh jalapeno pepper, diced
- 1 tsp fresh ginger, chopped
- 2 garlic cloves, minced
- 1 tbsp vegetable oil

- salt
Method
- Heat oil in the pan over medium heat.
- Add beef to the pan and cook until brown.
- Transfer to the slow cooker.
- Season browned beef with pepper and salt.
- In same pan, saute ginger, garlic, and jalapeno for 2 minutes.
- Add tomatoes and curry powder and stir for a minute.
- Transfer pan mixture to the slow cooker.
- Add remaining ingredients and mix well.
- Cover and cook on low for 8 hours.
- Serve and enjoy.
