Ingredients

- 2 tablespoons butter or margarine
- 1 cup chopped onion
- 2 tablespoons brown sugar
- 1 1/2 teaspoons curry powder
- 2 14 1/2 ounce chicken broth
- 1 29 ounce can solid pack pumpkin
- 3/4 cup milk
- 1/2 cup heavy cream – whipped
Method
- Salt, ground black pepper, cayenne pepper
- Snipped chives – for garnish
- In 3-quart saucepan, heat butter over medium heat until hot; cook onion 10 minutes, stirring occasionally.
- Stir in brown sugar and curry powder.
- Gradually add chicken broth and pumpkin.
- Bring to a boil over medium-high heat; reduce heat and simmer 5 minutes.
- Season with salt, black pepper and cayenne, as desired.
- Using blender or food processor, puree soup mixture until smooth.
- Blend in batches, if necessary Return to saucepan; stir in milk.
- Bring just to a boil over medium heat.
- Serve in individual soup bowls with a dollop of whipped cream; garnish with snipped chives.
