Ingredients
Makes 4 servings
- ¾ pound russet potatoes, peeled or well scrubbed
- ¾ pound sweet potatoes, peeled 1 teaspoon Old Bay Seasoning (optional)
- salt and freshly ground black pepper
- 2 tablespoons olive oil
Method
- Preheat the oven to 425°F
- Lightly oil a baking sheet and set aside
- Cut the white and sweet potatoes in half lengthwise, then cut each half into 1/2-inch slices
- Cut each slice in half lengthwise and place them in a bowl
- Sprinkle with the Old Bay Seasoning, if using and salt and pepper to taste
- Drizzle with olive oil and toss to coat
- Arrange the potatoes on the prepared baking sheet in a single layer
- Bake for 20 minutes, turn once and bake until crisp and brown, about 15 minutes longer
- Serve immediately
