Spice Cake With Mango Lime Recipe

Ingredients

Makes 8 servings

  • 1 1/2 cups all-purpose flour
  • ¾ cup sugar
  • 1/4 cup yellow cornmeal
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground ginger
  • 1 cup applesauce
  • 1/3 cup canola or other neutral oil
  • 2 teaspoons grated lime zest
  • 2 tablespoons water
  • 1 ripe mango, peeled, pitted and chopped

Method

  1. Preheat the oven to 350°F
  2. Lightly oil a 9-inch round cake pan and set aside
  3. In a large bowl, combine the flour, sugar, cornmeal, baking soda, salt, baking powder, cinnamon, allspice and ginger and set aside
  4. In a medium bowl, combine the applesauce, oil, lime zest and water, stirring to blend
  5. Fold in the mango
  6. Add the wet ingredients to the dry ingredients and mix to combine
  7. Pour the batter into the prepared baking pan
  8. Bake until a toothpick inserted in the center comes out clean, 45 to 50 minutes
  9. Let the cake cool in the pan for 10 minutes then invert onto a wire rack to cool completely before slicing
