Ingredients
Makes 8 servings
- 1 1/2 cups all-purpose flour
- ¾ cup sugar
- 1/4 cup yellow cornmeal
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground allspice
- 1/2 teaspoon ground ginger
- 1 cup applesauce
- 1/3 cup canola or other neutral oil
- 2 teaspoons grated lime zest
- 2 tablespoons water
- 1 ripe mango, peeled, pitted and chopped
Method
- Preheat the oven to 350°F
- Lightly oil a 9-inch round cake pan and set aside
- In a large bowl, combine the flour, sugar, cornmeal, baking soda, salt, baking powder, cinnamon, allspice and ginger and set aside
- In a medium bowl, combine the applesauce, oil, lime zest and water, stirring to blend
- Fold in the mango
- Add the wet ingredients to the dry ingredients and mix to combine
- Pour the batter into the prepared baking pan
- Bake until a toothpick inserted in the center comes out clean, 45 to 50 minutes
- Let the cake cool in the pan for 10 minutes then invert onto a wire rack to cool completely before slicing
