Spaghetti Alla Matriciana Recipe

Ingredients

  • Serving Size : 4
  • 1 1/2 cup skinned chopped tomatoes
  • 1 canned pimento (diced)
  • 1 tablespoon olive oil
  • 14 ounce spaghetti
  • 1 tablespoon butter
  • salt and pepper to taste
  • 1/2 cup diced lean bacon (or grated cheese prosciuto)

Method

  1. Heat oil and butter in pan and gently fry the bacon for 5 min until golden brown.
  2. Add tomatoes and pimento and cook over moderate heat for 10 min stirring occasionally.
  3. Cook pasta according to directions and drin well.
  4. Mix well with 1/2 the sauce.
  5. Top with the rest.
  6. Sprinkle with cheese and serve with extra cheese on the side.
