Ingredients
- pork loin chops, 1-inch (2 5 cm) thick
- 150 g dry corn bread stuffing mix
- 2 tbsps (28 ml) low-salt chicken broth
- 1/3 cup (80 ml) orange juice
- 1 tbsp (7 g) finely chopped pecans
- ¼ cup (60 ml) light corn syrup
- ½ teaspoon grated orange peel
Method
- With a sharp knife cut a horizontal slit in side of each chop, forming a pocket for stuffing
- Combine stuffing with remaining ingredients
- Fill pockets with stuffing
- Place on metal rack in slow cooker
- Cover and cook on low for 6 to 8 hours
- Uncover and brush with sauce
- Cook on high for 15 to 20 minutes
- Yield: 4 servings
- Per serving: 106 g water; 295 calories (20% from fat, 32% from protein, 48% from carb)
