- 11/2 cups oat flour or all-purpose wheat flour
- 1/3 cup fine yellow cornmeal
- 2 teaspoons baking powder
- pinch of sea salt.
- 1 egg
- 2 egg whites
- 1/2 teaspoon (2 g) stevia in the raw or 1/4 cup coconut sugar
- 11/8 cups unsweetened almond milk
- 2 tablespoons 2% Greek yogurt
- 2 tablespoons melted coconut oil or olive oil
- 1 large ripe banana, mashed
- 1/3 cup canned corn, drained
- olive oil spray.
- garnish: reduced-calorie maple syrup or fresh berries.
Method
- Preheat a waffle iron until hot
- Mix together the oat flour, cornmeal, baking powder, and salt in a large bowl
- In a separate medium bowl, beat the egg and egg whites together until frothy
- Then, add the stevia, almond milk, yogurt, and coconut oil to the bowl and mix everything together until it’s a smooth consistency
- Add the wet ingredients to the dry ingredients and mix together, being careful not to overmix
- Small lumps are okay! Fold in the banana and corn
- Spray the hot waffle iron with olive oil spray
- Add about 1/2 cup of the batter to the waffle iron, close the lid, and cook for 5 to 8 minutes, or until the edges of the waffle are golden brown
