Sour Cream-Rhubarb Squares Recipe

Ingredients

  • Serving Size : 16
  • 1/2 cup sugar
  • 1/2 cup nuts – chopped
  • 1 tablespoon butter – melted
  • 1 teaspoon cinnamon
  • 1 1/2 cups brown sugar – packed
  • 1/2 cup shortening
  • 1 egg
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup dairy sour cream
  • 1 1/2 cups rhubarb – cut in 1″ pieces

Method

  1. Mix first 4 ingredients until crumbly; set aside.
  2. Cream together brown sugar, shortening and egg.
  3. Stir together flour, baking powder and salt; add to creamed mixture alternately with sour cream.
  4. Stir in rhubarb.
  5. Turn into greased and floured 9×13-inch pan.
  6. Sprinkle with reserved topping.
  7. Bake at 350 degrees for 45 to 50 minutes, or until it tests done.
  8. Cut into squares, and serve warm or cold.
  9. Makes 16 to 20 servings.
