Ingredients
Makes about 24 snow peas
- 24 large firm snow peas, trimmed
- 3 garlic cloves, crushed
- 2 tablespoons chopped oil-packed sun-dried tomatoes
- 1/2 teaspoon salt
- 1 1/2 cups cooked or 1 can chickpeas, drained and rinsed
- 1/4 cup tahini (sesame paste)
- 2 tablespoons water
- 1/8 teaspoon ground cayenne (optional)
Method
- Immerse the snow peas in a medium saucepan of simmering water just long enough to turn them bright green, about 30 seconds
- Drain and run under cold water
- Pat dry and set aside
- In a food processor, combine the garlic, tomatoes and salt and process to a thick paste
- Add the chickpeas, tahini, water and cayenne, if using and process until smooth
- Taste, adjusting seasonings if necessary
- Spoon or pipe the mixture onto the snow peas and arrange decoratively on a platter to serve
