Snow Peas Stuffed With Sun-Dried Tomato Hummus Recipe

Ingredients

Makes about 24 snow peas

  • 24 large firm snow peas, trimmed
  • 3 garlic cloves, crushed
  • 2 tablespoons chopped oil-packed sun-dried tomatoes
  • 1/2 teaspoon salt
  • 1 1/2 cups cooked or 1 can chickpeas, drained and rinsed
  • 1/4 cup tahini (sesame paste)
  • 2 tablespoons water
  • 1/8 teaspoon ground cayenne (optional)

Method

  1. Immerse the snow peas in a medium saucepan of simmering water just long enough to turn them bright green, about 30 seconds
  2. Drain and run under cold water
  3. Pat dry and set aside
  4. In a food processor, combine the garlic, tomatoes and salt and process to a thick paste
  5. Add the chickpeas, tahini, water and cayenne, if using and process until smooth
  6. Taste, adjusting seasonings if necessary
  7. Spoon or pipe the mixture onto the snow peas and arrange decoratively on a platter to serve
