Snow Crab Stir-Fry Seafood Recipe

Ingredients

  • 1 pound snow crab single cut legs — thawed if necessary
  • –or split legs
  • 2 tablespoons vegetable oil
  • 3 cups chopped broccoli
  • 3 cups snow peas — trimmed
  • 1 medium red bell pepper — sliced into strips
  • 4 stalks green onion — cut in 1″ pieces

Orange-Ginger Sauce:

  • 3/4 cup orange juice
  • 1 tablespoon low-sodium soy sauce
  • 2 teaspoons cornstarch
  • 1 clove garlic — pressed
  • 1/2 teaspoon fresh ginger root — grated
  • 1/2 teaspoon crushed red pepper flakes

Method

  1. Cut Snow Crab into 2-inch pieces; score shells using serrated knife
  2. Heat 1 tbsp oil in frying pan over high heat
  3. Add crab, cover, and stir-fry 4-5 minutes, stirring occasionally
  4. Remove from pan; keep warm
  5. Add 1/2 tbsp oil and broccoli
  6. Cook, stirring constantly, 1-2 minutes
  7. Remove from pan; keep warm
  8. Add remaining 1/2 tbsp oil and remaining vegetables to pan
  9. Stir-fry 1 minute
  10. Add cooked crab and broccoli
  11. Pour in Orange-Ginger Sauce; stir to coat vegetables
  12. Continue to stir until sauce thickens
  13. Remove from heat and serve with cooked rice
  14. Orange-Ginger Sauce: Whisk together orange juice, soy sauce, cornstarch, garlic, grated ginger and crushed red pepper flakes
