Snow Crab and Chicken Teriyaki Seafood
Ingredients
- 4 skinless boneless chicken breast halves
- 4 snow crab clusters — thawed if necessary
Teriyaki Marinade:
- 3/4 cup peanut oil
- 6 tablespoons soy sauce
- 6 tablespoons sherry
- 3 tablespoons brown sugar
- 1 tablespoon fresh ginger root — grated
- 2 teaspoons orange zest
- 1 1/2 teaspoons minced garlic
Method
- Place chicken in glass pan
- Cover with 3/4 cup Teriyaki Marinade
- Set aside 1/2 cup Teriyaki Marinade for dipping sauce
- This should not touch raw chicken
- Cover chicken with plastic and refrigerate 4-8 hours
- Place chicken on broiling pan and broil 5-6 inches from heat for 15-20 minutes
- Turn chicken while broiling and brush with another 1/4 cup Teriyaki Marinade
- Meanwhile, brush Snow Crab with oil and broil 5-6 inches from heat for 5 minutes
- Serve chicken and crab with reserved 1/2 cup Teriyaki Marinade for dipping
