Ingredients
Makes 2 to 3 servings
- ¾ cup canned solid-pack pumpkin
- 1 frozen ripe banana, cut into chunks
- 1/3 cup pure maple syrup
- 1 teaspoon pure vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 2 cups chilled plain or vanilla soy milk or other nondairy milk
Method
- In a blender or food processor, combine the pumpkin, banana, maple syrup, vanilla, cinnamon, 1/4 teaspoon of the nutmeg and 1 cup of the soy milk
- Blend until smooth
- Add the remaining soy milk and blend until smooth
- Pour into glasses and sprinkle the tops with the remaining 1/4 teaspoon nutmeg
- Serve immediately
