Slow-Cooker Mexican Corn Recipe

Ingredients

  • 580g frozen corn, partially thawed
  • 115g pimientos, chopped
  • ¼ cup (38 g) finely chopped green bell pepper
  • ¼ cup (60 ml) water
  • ¼ teaspoon pepper
  • ½ teaspoon paprika
  • ½ teaspoon chili powder

Method

  1. Combine all ingredients in slow cooker
  2. Cover and cook on high 45 minutes, then on low 2 to 4 hours
  3. Stir occasionally
  4. Yield: 8 servings
  5. Per serving: 79 g water; 62 calories (5% from fat, 12% from protein, 83% from carb)
