Skillet Vegetable Medley Recipe

Ingredients

  • Serving Size : 1
  • 2 tablespoons water
  • 1 tablespoon cider vinegar
  • 1 tablespoon vegetarian Worcestershire sauce
  • 1 1/2 teaspoons sugar
  • 1 1/4 teaspoons salt
  • 1/2 teaspoon crumbled oregano
  • 1/4 teaspoon dry mustard
  • 1/2 pound fresh green beans – cut into
  • 2 inch lengths
  • 1/2 pound button mushrooms – halved
  • 2 medium zucchini – sliced
  • 2 tomatoes – cut in wedges

Method

  1. Combine first 7 ingredients in pan and heat to a boil.
  2. Add beans and return to boil; reduce heat.
  3. Cover and simmer 5 minutes.
  4. Add mushrooms and zucchini; cover and simmer 3 minutes.
  5. Add tomatoes; cover and simmer 1 minute.
  6. Serve hot.
  7. To serve cold, do not cook tomatoes.
  8. Cover and refrigerate after cooking other ingredients, adding tomatoes just before serving.
