Ingredients
Makes 1 loaf
- 1 1/2 cups warm plain soy milk
- 1 tablespoon cider vinegar 1 1/2 cups yellow cornmeal
- ¾ cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup olive oil
Method
- Preheat the oven to 375°F
- Lightly oil an 8-inch square baking pan and place it in the oven while you prepare the batter
- In a small bowl, combine the soy milk and vinegar and set aside
- In a large bowl, combine the cornmeal, flour, sugar, baking powder and salt
- Stir in the soy milk mixture and the oil and mix well with a few quick strokes
- Remove the hot pan from the oven and scrape the batter into the hot pan
- Bake until golden brown and a toothpick inserted in the center comes out clean, about 30 minutes
- Cool for 10 minutes
- Serve warm
