Ingredients
Makes about 1 1/2 cups
- 1/2 cup creamy peanut butter
- 1 garlic clove, chopped
- 1/4 cup soy sauce
- 3 tablespoons fresh lime juice
- 1 teaspoon light brown sugar
- 1/4 to 1/2 teaspoon crushed red pepper, to taste
- 1/2 cup water
Method
- In a blender or food processor, combine all the ingredients and process until well blended
- Taste, adjusting seasonings if necessary
- If serving as a dipping sauce, use immediately
- If using as a noodle sauce, transfer the peanut sauce to a saucepan over low heat and stir in up to a cup of unsweetened coconut milk and heat until hot
- If not using right away, cover and refrigerate until needed
- Properly stored, the sauce will keep for 2 to 3 days
