Ingredients
- 5 lbs. flour
- 4 1/2 c. sugar
- 1 doz. eggs
- 3 cubes butter
- 3 c. milk
- 1 tbsp. salt
- 6 pkgs. yeast
Method
- Dissolve yeast in 1/2 cup lukewarm water
- Scald milk; pour slowly over beaten eggs
- Add sugar and butter which have been creamed together
- Can add 1 teaspoon of lemon extract to milk and egg mixture
- Mix well
- Cool until lukewarm
- Sift flour into large pan with salt
- Add above ingredients
- Add yeast, milk, and egg mixture
- Knead until smooth; dust hands with flour so dough will not stick to hands
- Make a medium firm dough
- Set aside in warm place
- Cover with towel or blanket
- Let rise for 5 to 6 hours
- Work dough again and let rise for 1 1/2 to 2 hours
- Bake loaves 35 minutes in 300 degree oven
- Rolls take less time
