Sicilian Stuffed Tomatoes Recipe

Ingredients

Makes 4 servings

  • 2 cups water
  • 1 cup couscous
  • salt
  • 3 green onions, minced
  • 1/3 cup golden raisins
  • 1 teaspoon finely grated orange zest
  • 4 large ripe tomatoes
  • 1/3 cup toasted pine nuts
  • 1/4 cup minced fresh parsley
  • freshly ground black pepper
  • 2 teaspoons olive oil

Method

  1. Preheat the oven to 375°F
  2. Lightly oil a 9 x 13-inch baking pan and set aside
  3. In a large saucepan, bring the water to a boil over high heat
  4. Stir in the couscous and salt to taste and remove from the heat
  5. Stir in the green onions, raisins and orange zest
  6. Cover and set aside for 5 minutes
  7. Cut a 1/2-inch-thick slice off the top of each of the tomatoes
  8. Scoop out the pulp, keeping the tomato shells intact
  9. Chop the pulp and place it in a large bowl
  10. Add the couscous mixture along with the pine nuts, parsley and salt and pepper to taste
  11. Mix well
  12. Fill the tomatoes with the mixture and place them in the prepared pan
  13. Drizzle the tomatoes with the oil, cover with foil and bake until hot, about 20 minutes
  14. Serve immediately
