Shortbread Cookies

Ingredients

Makes : 2 dozen

  • 1 3/4 cups all purpose flour
  • 2 tablespoons rice flour
  • 1 cup almond butter
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon zest
  • 1 pinch of salt

Method

  1. In a bowl, combine the all purpose flour with the rice flour
  2. In another bowl, mix well the almond butter with a hand mixer until fluffy and light
  3. Add the sugar and mix well
  4. Stir in the vanilla and lemon zest and then incorporate the flours
  5. Refrigerate the dough for 1 hour
  6. Flour your working surface well then roll the dough in a 1/4 inch thick sheet
  7. Using a cookie cutter, cut your desired shapes
  8. Arrange all the cookies on a baking tray lined with parchment paper
  9. Bake the cookies in a preheated oven at 350F for 10-15 minutes or until slightly golden on the edges
  10. Let them cool in the pan then transfer to an airtight container to store until serving
  11. They can be decorated with any glaze you want, from chocolate to royal icing
