Short Ribs Slow Cooker Recipe

Ingredients

  • 2/3 cup (83 g) flour
  • ½ teaspoon pepper
  • 4 pounds (1.8 kg) beef short ribs
  • ¼ cup (60 ml) olive oil
  • 1 cup (160 g) chopped onion
  • 1½ cups (355 ml) low-salt beef broth
  • ½ cup 120 ml dry red wine
  • ¼ cup (60 g) brown sugar
  • ½ cup (140 g) chili sauce
  • ½ cup (120 g) low-salt ketchup
  • ¼ cup (60 ml) Worcestershire sauce
  • 1½ teaspoons minced garlic

Method

  1. Combine flour and pepper in a plastic bag
  2. Add ribs and shake to coat
  3. Heat half of the oil in a skillet over medium-high heat
  4. Brown half the short ribs and transfer to slow cooker; repeat with remaining oil and meat
  5. Combine remaining ingredients in skillet
  6. Cook, scraping up browned bits, until mixture comes to boil
  7. Pour over ribs
  8. Cover and cook on low 9 to 10 hours
  9. Yield: 8 servings
  10. Per serving: 260 g water; 567 calories (50% from fat, 33% from protein, 17% from carb)
