Ingredients
Makes 4 servings
- 2 tablespoons soy sauce
- 1 tablespoon toasted sesame oil
- 1 teaspoon sugar
- 1 teaspoon cornstarch
- 1 tablespoon canola or grapeseed oil
- 1 garlic clove, minced
- 2 teaspoons grated fresh ginger
- 6 shiitake mushroom caps, lightly rinsed, patted dry and cut into 1/4-inch strips
- 1 red bell pepper, cut into 1/4-inch slices
- 8 ounces snow peas, trimmed
- 1/2 teaspoon crushed red pepper
- 1 tablespoon toasted sesame seeds, garnish
Method
- In a small bowl, combine the soy sauce, sesame oil, sugar and cornstarch and set aside
- In large skillet, heat the canola oil over medium heat
- Add the garlic, ginger, mushrooms, bell pepper, snow peas and crushed red pepper and stir-fry 2 to 3 minutes
- Add the sauce and cook until hot, 2 to 3 minutes longer
- Garnish with sesame seeds and serve
