Ingredients
Makes 4 servings
- 2 tablespoons canola or grapeseed oil
- 2 garlic cloves, minced
- 1 teaspoon grated fresh ginger
- 2 medium heads baby bok choy, trimmed and halved lengthwise
- 1/4 cup dry sherry
- 2 tablespoons tamari soy sauce
- 1/3 cup water
Method
- In a large skillet, heat the oil over medium heat
- Add the garlic and ginger and cook until softened, about 30 seconds
- Arrange the bok choy halves in the skillet in a single layer
- Add the sherry, soy sauce and water
- Cover and simmer until the bok choy is tender, 15 to 20 minutes, turning once about halfway through and adding a bit more water if needed so the vegetables do not burn
- Serve immediately
