Ingredients
Makes 4 servings
- 1/4 cup tahini (sesame paste)
- 2 tablespoons fresh lemon juice
- 1 garlic clove, minced
- 1/4 cup toasted sesame oil
- salt and freshly ground black pepper
- 9 ounces fresh baby spinach
- 1 tablespoon black sesame seeds, for garnish
Method
- In a blender or food processor, combine the tahini, lemon juice, garlic, oil and salt and pepper to taste
- Blend until smooth and set aside
- Place the spinach in a large pot with 2 tablespoons of water over medium heat
- Cover and cook until the spinach is wilted and the water is evaporated, stirring occasionally, 3 to 4 minutes
- Season with salt and pepper to taste
- Transfer the spinach to a bowl and drizzle with the tahini sauce
- Sprinkle with sesame seeds and serve immediately
