Sesame Spinach Recipe

Ingredients

Makes 4 servings

  • 1/4 cup tahini (sesame paste)
  • 2 tablespoons fresh lemon juice
  • 1 garlic clove, minced
  • 1/4 cup toasted sesame oil
  • salt and freshly ground black pepper
  • 9 ounces fresh baby spinach
  • 1 tablespoon black sesame seeds, for garnish

Method

  1. In a blender or food processor, combine the tahini, lemon juice, garlic, oil and salt and pepper to taste
  2. Blend until smooth and set aside
  3. Place the spinach in a large pot with 2 tablespoons of water over medium heat
  4. Cover and cook until the spinach is wilted and the water is evaporated, stirring occasionally, 3 to 4 minutes
  5. Season with salt and pepper to taste
  6. Transfer the spinach to a bowl and drizzle with the tahini sauce
  7. Sprinkle with sesame seeds and serve immediately
