Sesame-Crusted Seitan Recipe

Ingredients

Makes 4 servings

  • 1/3 cup sesame seeds
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup plain unsweetened soy milk
  • 1 pound seitan, cut into 1/4-inch slices
  • 2 tablespoons olive oil

Method

  1. Place the sesame seeds in a dry skillet over medium heat and toast until light golden, stirring constantly, 3 to 4 minutes
  2. Set aside to cool, then grind them in a food processor or spice grinder
  3. Place the ground sesame seeds in a shallow bowl and add the flour, salt and pepper and mix well
  4. Place the soy milk in a shallow bowl
  5. Dip the seitan in the soy milk, then dredge it in the sesame mixture
  6. In a large skillet, heat the oil over medium heat
  7. Add the seitan, in batches if necessary and cook until crisp and golden brown on both sides, about 10 minutes
  8. Serve immediately
